Vegan Single Serve Chocolate Chunk Cookie

  • 1 tsp ground flax meal
  • 1 tbsp water
  • 2 tbsp vegan butter
  • 2 tbsp brown sugar packed
  • 1 tbsp white sugar
  • 1/4 tsp vanilla extract

  • 1/4 tsp baking powder
  • 1/8 tsp baking soda
  • pinch sea salt
  • 2 tbsp chopped dark chocolate

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a small bowl, whisk together the flax meal and water. Set aside to gel while you gather the remaining ingredients.
  • In a mixing bowl, cream together the vegan butter and both sugars using a hand mixer until smooth. Stir in the vanilla extract and mix until well combined. Add the flax mixture and continue to beat until fully incorporated.
  • Gradually add the all-purpose flour, baking powder, baking soda, and sea salt to the wet ingredients. Mix until just combined and no dry flour streaks remain. Gently fold in the chopped dark chocolate chunks. The dough will be slightly soft, which is perfect. Shape it into a large ball and place it in the center of your prepared baking sheet.
  • Bake for 8 minutes. Remove from the oven and tap the baking sheet firmly on the counter 3-4 times (dropping it from a few inches helps) to encourage those desirable crispy edges and chewy center. Return to the oven for another 4-5 minutes, or until golden brown. The center may still appear slightly soft, but it will firm up as it cools.
